I only eat quiche when I'm at a work-related buffet, am dying of starvation and there's absolutely nothing else that's vegi. I prefer to think of it as being pastry with liquidised vomit.
goats cheese works great ... tis softer and more flavoursome than most cow cheeses and gives a really distinct taste. usually if I`m making one, I just cut thick slices of goats cheese to go on teh top and let them melt as they want
some quiche's are rank ... especially the shop bought ones where the pastry has gone soggy *shudder* but a proper home made one which is all crisp and firm and non squishy ... them's be good'uns!
quiche is really nice. but not as a meal...better as a finger buffet type thing. and the whole "unappetising topping" thing is only right if you buy no frills type quiche. if you buy really expensive M&S quiche it's proper tasty.
