I make lovely quiches! Grilled chicken, asparagus and swiss cheese is very nice.
So is roasted red pepper, black olive and asiago quiche.
Or plain old spinach, mushroom and cheddar cheese.
I'll bet I could convert you! ;)

I've never tried it, but I've seen recirpes for brie and leek quiche. Yum!

goats cheese works great ... tis softer and more flavoursome than most cow cheeses and gives a really distinct taste. usually if I`m making one, I just cut thick slices of goats cheese to go on teh top and let them melt as they want
